Every breakfast I serve at Los Colores de Mérida includes a course of beans. Here, I’m sharing exactly how I make a delicious bowl of Frijoles Rojos—a Yucatean staple.

-POT BEANS-

I start by adding the following ingredients to a traditional Mexican terra cotta bean pot:

1 kilo red kidney beans
3 garlic cloves
½ yellow onion
2 bay leaves

I fill the pot with filtered water
I place the pot in a cold oven, then set the temperature to 220°C. I let the beans cook for 3 hours, or until they’re al dente.

-ENRICHMENT-

To increase the flavor, I prepare an enrichment sauce using:

4 guajillo chilies, boiled in filtered water for 15 minutes
½ yellow onion
4-6 epazote leaves
Salt to taste

I blend everything together, including the guajillo chili cooking liquid, until it’s smooth and rich in flavor.

-FINAL PREPARATION-

In a large cast iron pot, I heat up some avocado oil and then add the pot beans along with the enrichment sauce. I bring it all to a boil, then let it simmer until the liquid has reduced by half.

-SERVING-

I serve the beans warm with a variety of toppings for you to choose from.

Frijoles Rojos are as comforting as they are flavorful. I can’t wait for you to experience this tradition with me!

Toesto is only 2 blocks from Los Colores. They are celebrating 17 years in the neighborhood and it’s easy to know why! Jose Luis, the proud owner, hand roasts the coffee beans in small batches right across the street from the cafe. The people that work there are very kind and welcoming. They care just as much about Toesto as Jose Luis.

Each of the bathrooms at Los Colores de Merida are original. The tiles and ceramics are original to the house. It was important to me to keep this history and character so the tiles were restored.

Restoration took nearly 5 weeks and was done by hand. The grout was carefully removed to prevent damage to the 75 year old tiles. Then, they were cleaned then re-grouted.

This is the en-suite bathroom for La Habitacion Verde. Each of the 5 bathrooms are unique and the colors were used to inspire the bedrooms in which they are connected.

We are currently in the middle of the Dry Season in Yucatan. We can go for weeks without rain, temperatures can range from 16 C/62 F at night with daytime temperatures around 29 C/85 F. There are often tropical breezes in the afternoon bringing in the cool air for beautiful star-filled nights.

During the dry season, there is not much growth in the gardens at Los Colores so I was surprised by my recent discovery! Last week, I was in the kitchen preparing for the next mornings breakfast and that tropical breeze brought in a beautiful fragrance that I hadn’t smelled before. The neighbor can wear a lot of perfume so I assumed she was preparing for a night out but the amazing smell gradually became more intense. After I finished cooking, I took the compost to the pile and discovered the smell was actually coming from the flowers pictured.

The Dracaena Fragrans is a tropical evergreen with flowers that bloom only at night releasing a beautifully floral fragrance strong enough to fill the night air. During the day, the flowers close and are loved by the local bees.

The gardens of Los Colores are filled with tropical plants and trees just waiting to greet you and help you slow down.

I am continuously working on new breakfast recipes to serve to my guests.

This is a "Colombian Style" Empanada with Cauliflower and Lentils. On the side is a "Colombian Style" Fresh Salsa called Aji.

A Colombian Empanada is made with cornmeal and does not use a leavening agent. A Yucatecan Empanada is made with wheat flour and contains baking powder. The texture is very different between the two. Colombian Empanadas have a more crunchy texture whereas the Yucatecan version is more flakey.

Esta es una empanada "estilo colombiano" con coliflor y lentejas. A un lado hay una salsa fresca "estilo colombiano" llamada ají.

Una empanada colombiana se hace con harina de maíz y no utiliza un agente leudante. Una empanada yucateca se hace con harina de trigo y contiene polvo para hornear. La textura es muy diferente entre las dos. Las empanadas colombianas tienen una textura más crujiente, mientras que la versión yucateca es más hojaldrada.

During the 3 months of renovations at Los Colores de Merida, I chose 14 paint colors. I spent time in each space deciding upon colors that would enhance the already beautiful spaces. I chose "trafico" for the stairs. The ceiling height is just over 6 meters creating a space that uniquely captures the morning sunlight. I wanted to add colors that would enhance the happiness the tropical sun gave me as it poured in each morning.

Now, it's your turn to enjoy descending through the bright, tropical sun from your 2nd floor guest room to the smells of your breakfast cooking and your coffee being brewed.

Durante los 3 meses de renovaciones en Los Colores de Mérida, elegí 14 colores de pintura. Pasé tiempo en cada espacio decidiendo colores que realzarían los ya hermosos espacios. Elegí "tráfico" para las escaleras. La altura del techo es de poco más de 6 metros, creando un espacio que captura de forma única la luz del sol de la mañana. Quería agregar colores que realzaran la felicidad que me traía el sol tropical cada mañana.

Ahora es su turno de disfrutar descendiendo bajo el brillante sol tropical desde su habitación del segundo piso hasta los olores del desayuno que se prepara y del café que se prepara.
